Bacon Broccoli Quiche

Now that we are waking up to cool weather, I am enjoying baking in the mornings. We love eggs. And we love veggies, but we don’t often eat them together. Quiche provides the perfect combination of all of these things. And with all of the candy and holiday treats in the near future, it won’t hurt to squeeze in some nutritious veggies at breakfast! The best part: this recipe only calls for one pie crust for the bottom, so you can save the other half for pumpkin pie or another fall treat. Or you can always double the rest of the ingredients and make two quiches.

Bacon Broccoli Quiche

Cooking Instructions:

Roll out half a batch of dough into a 12 inch circle. Place in a 9 inch foil pie pan, cut off any excess, and crimp the edges. Cover with a sheet of parchment paper and fill pan with dry beans or pie weights. Bake 20 minutes at 375 degrees or until crust looks dry and light brown. Meanwhile, cook bacon over medium heat until crisp. Cool, crumble and set aside. Steam broccoli florets until crisp tender and set aside. Heat butter in a skillet over medium heat. Add onion and cook 8-10 minutes until soft and golden. Season with salt and pepper to taste. In a large bowl, whisk together eggs, heavy cream, cheddar cheese, steamed broccoli, and cooked bacon. Season with salt and pepper as desired. Pour egg mixture into the crust and bake at 375 for 40-45 minutes until center is just set. Serve warm or at room temperature.

Freezing Instructions:

Cook as directed above. Cool quiche completely. Cover with foil, label, and freeze. (Cut into individual portions and freeze separately if necessary.) TO SERVE: Thaw on the counter. Serve at room temperature or reheat.

    This was my first attempt at quiche. It was GREAT. I sauteed the onions first and used my lactaid milk instead of cream. It came out AMAZING. We both gave it an “A” and I look forward to making it again!!!!

    Just want to say that this was absolutely delicious! I modified to make a “no crust” quiche (just to save a few calories) and wondered if it would turn out alright. It did and was delicious. I think this is my favorite from the November menu!
