Baked Ravioli Bites

Have I mentioned how much I adore pasta?  If it were up to me, pasta would be considered a food group all by itself.  These Baked Ravioli Bites are a blend between Italian food and Mexican food.  They are coated in bread crumbs and taco seasoning to make them just the perfect amount of crispy.  They freeze beautifully and you can pull just a few out for lunch or an afternoon snack.

Ingredients:

  • 20 ounces refrigerated ravioli
  • 1 cup bread crumbs
  • 1.4 ounces taco seasoning
  • 2 Tablespoon flour
  • 0.25 cup shredded mexican blend cheese
  • 3 medium egg

Directions:

Preheat oven to 375.  Line a baking sheet with foil, and place a wire rack on top.  Combine in a bowl the bread crumbs, taco seasoning, flour, and cheese.  In a small bowl, whisk the egg.  Dip the ravioli into the egg and then into the bread crumb mixture.  Turn ravioli over to coat both sides with bread crumb mixture.  Place on wire rack and bake in oven for 10-15 minutes until golden brown.  Serve with ranch or marinara sauce.

Freezing Directions:

Prepare and bake ravioli as directed above.  Flash freeze, then place into freezer bag.  Label and freeze.  To serve: reheat in microwave for 1 minute or in oven at 325 for 7 minutes.

Could you use ravioli from the freezer section and let it thaw before trying?

We made these the other day with grilled chicken and Mozzarella ravioli from Costo. We didn’t do the taco flavorings just kept it simple italian seasonings but they were sooooo yummy with some spaghetti sauce on the side…I’ve got some mini ravioli’s in the freezer to try next!! Thanks for the great recipe!!

We made these tonight. Brother Goose helped by spooning on the breading mixture. Fun way to keep him involved in dinner.

    Thanks! :)

I’m making several batches of these tonight for a freezer meal swap. Just wondering if you freeze them, do you need to thaw before microwaving or baking on serving day or just cook from frozen?

Do you bake on a metal rack?
