Berries, Nuts, and Coconut Shreds

 

Every once in a while on this Paleo journey it’s nice to have a bowl of cereal. Of course, we don’t usually go for traditional cereal. But a mixture of nuts, fruit and a little bit of coconut flakes will often do the trick! The great thing about this recipe is that you don’t really have to measure. Just mix your favorite fruit and complimentary fat together and you’ll have a delicious, filling breakfast or snack.

Berries, Nuts, & Coconut Shreds

Ingredients:

  • 4 cups blueberries
  • 4 cups strawberries, sliced
  • 4 Tablespoons almonds, sliced
  • 4 Tablespoons cashews
  • 4 Tablespoons coconut flakes
  • coconut milk (optional)

Directions:

In a medium bowl, mix together blueberries, sliced strawberries, almonds, cashews, and coconut flakes. Divide into four bowls and serve with coconut milk if desired.

Freezing Directions:

In a medium bowl, mix together blueberries, sliced strawberries, almonds, cashews, and coconut flakes. Pour into freezer bag, label and freeze flat. To serve: Thaw. Serve with coconut milk if desired.

    I always have problems when I freeze strawberries, once they thaw they swell and seem to get sort of gummy. They are no longer like fresh cut strawberries. Do you have any sort of trick for this?

    I just had this for dinner and it was absolutely amazing and soooooo much food I could barely finish.
