Copycat Lean Cuisine Chicken Margherita

When counting calories,  the easiest meal option is sometimes from the freezer aisle.  With the nutritional information and WW points boldy on the front of the packaging, grabbing a quick meal to stay within your diet is a cinch. However, I am usually sadly disappointed with the serving size and the lack of flavor from these meals.  Copycatting this Chicken Margherita, you still get a meal that is within your dietary guidelines, but with an explosion of flavors in every bite and almost twice the serving size of it’s freezer aisle counterpart.

Ingredients:

  • 12 ounces penne pasta
  • 2,67 cups chicken breast, cooked and cut into 1″ chunks
  • 1 Tablespoons olive oil
  • 0.5 Tablespoons balsamic vinegar
  • 2 Tablespoons basil
  • 1 cups grape tomatoes, quartered
  • 0.75 cups reduced fat mozzarella cheese

Directions:

Cook pasta according to package directions until just al dente. Drain. In a large bowl, combine pasta, chicken, olive oil, balsamic vinegar, and basil. Transfer to a glass baking dish, top with tomatoes and mozzarella cheese. Bake, covered, 350F for 15 minutes until heated through.

Freezing Directions:

Cook pasta according to package directions until just al dente. Drain. In a large bowl, combine pasta, chicken, olive oil, balsamic vinegar, and basil. Gently fold in grape tomatoes and mozzarella cheese. Divide between quart freezer bags, label and freeze. TO SERVE: Thaw. Reheat in microwave for 1-2 minutes.

    I am a newbie and I cannot wait to try this recipe. I normally love Lean Cuisine’s but hate the price.

    It looks like there is some seasoning on the dish, but I don’t see any in the ingredients. Is there supposed to be some basil or oregano or anything else? This looks great I can’t wait to make it for some lunches!

    Wow…this was A-M-A-Z-I-N-G! Seriously waaaay better than I had expected. I feared it would be really bland and plain pasta tasting, but NO WAY…was AWESOME!!! Making it for the 2nd time tonight!!! THANKS!
