Better Than The Freezer Aisle: Copy Cat Trader Joe’s Chili Lime Chicken Burgers

Spring is just around the corner, or at least we hope so!  I can’t wait to fire up the grill and truly welcome spring!  These delicious chicken burgers (a Trader Joe’s copy cat) are the perfect way to satisfy you until spring truly arrives.  They can be cooked on the grill or the stove top – you decide.  The blend of flavors will have you asking for more, especially when topped with the guacamole.  If you want to add a slice of dairy free cheese, I imagine that would be a nice addition, but it doesn’t need it, as some burgers do.  Try your hand at these chili lime chicken burgers, and I promise you won’t want to buy the box the next time you are at your local grocery.

Better Than The Freezer Aisle:  Copy Cat Trader Joe’s Chili Lime Chicken Burgers

Ingredients:

  • 1 pound ground chicken
  • 0.25 cup green onions, chopped
  • 0.25 cup red bell pepper, chopped
  • 2 Tablespoons cilantro, chopped
  • 2 teaspoons minced garlic
  • 0.5 teaspoon salt #1
  • 0.25 teaspoon red pepper flakes
  • 1 medium lime, cut in half
  • 4 gluten free buns (optional)
Simple Guacamole Topping
  • 1 medium avocado, mashed
  • 0.25 teaspoon garlic powder
  • 0.125 teaspoon salt #2
  • 0.125 teaspoon pepper


Directions:

Combine chicken, green onions, red bell pepper, cilantro, garlic, salt, red pepper flakes and juice from half of the lime in a bowl. Mix until thoroughly combined. Form into equal patties. Grill in a greased skillet or grill pan over medium-high heat for 3-4 minutes on each side, until cooked through.  Serve on gluten free bun.  Top with guacamole (Mash avocado, garlic powder, salt and pepper).  

Freezing Directions:

Flash freeze before cooking, then place in a gallon size freezer bag.  Prepare guacamole on serving day.  Remove as much air from the bag as possible, label & seal.  TO SERVE:  Thaw.  Grill in a greased skillet or grill pan over medium-high heat for 3-4 minutes on each side, until cooked through.  Serve on gluten free bun and prepare guacamole (mash avocado, garlic powder, salt and pepper).

    Made these at the beginning of the month and had them tonight for dinner. So good! I topped with with homemade Boursin style cheese and used turkey because it was what we had.

    Next time I will use roasted red peppers so the texture is softer for my husband, he is weird about chunks. Also if you are using bigger buns, I would increase the meat a bit or make sure you buy the smallish buns (should have just made my own)
