Better Than The Freezer Aisle: Copycat Smart Ones Fire Roasted Vegetable Soup

Lunch is one of the most difficult times of the day to get a good meal in my stomach.  I pack lunches for the kids and the husband, but always seem to forget about my own.  By the time the clock strikes noon, my belly is growling, and I am quickly reaching the “hangry” (hungry + angry) phase. For me, driving through the local fast food joint isn’t an option, because I have Celiacs Disease and our rural community doesn’t have a lot of offerings. The frozen food section of our local grocery store isn’t much better, and I try to steer clear of all of the preservatives and things I can’t pronounce on the labels.
So, as you can see, having my freezer stocked with gluten free options for quick and easy lunch prep is a must.  The roasted vegetables add amazing flavor and it takes just a few minutes to reheat.

Smart Ones Fire Roasted Vegetable Soup (Gluten Free!)

Ingredients:

  • 1 medium zucchini, sliced and quartered
  • 1 medium red pepper, sliced
  • .33 cups onion, diced
  • 0.5 cup corn
  • 0.5 medium green pepper, sliced
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups vegetable broth
  • 0.5 cup spinach, chopped
  • 1 teaspoon Italian seasoning

Directions:

In a large bowl, combine zucchini, red pepper, corn, green pepper, onion, tomatoes, olive oil, salt and pepper. Toss until all vegetables are evenly coated with oil, salt and pepper. Spread vegetables in an even layer on a rimmed baking sheet. Roast at 425 for 20 minutes. In a saucepan over medium heat, combine vegetable broth, spinach, Italian seasoning, and roasted vegetables. Simmer on medium low for 30 minutes.

Freezing Directions:

Cook as directed above.  Remove from heat and allow to cool completed. Divide into freezer storage bags, label and freeze. TO SERVE: Thaw. Reheat in microwave safe bowl 1 minute or until heated through.

    How much onion? It is the body of the directions but not in the ingredients.
