Better Than The Freezer Aisle: Copycat SmartOnes Breakfast Quesadilla
The last thing I want to worry about as I am running out the door with breakfast in hand, is if I am breaking my eating habits with my first meal. Luckily these copycat Breakfast Quesadillas are only WW+5 and super delicious. And did I mention how amazingly simple they are to make? I whipped out a double batch in less than a 1/2 hour. Even if you aren’t counting points or calories, these are a great breakfast option for the entire family!
Copycat SmartOnes Breakfast Quesadilla

- 1 cup egg substitute
- 1 cup reduced fat shredded cheddar cheese
- 0.25 cups red bell pepper, diced
- 0.25 cups green onion, sliced
- 0.5 teaspoons garlic powder
- 4 large flour tortillas
Spray skillet with a non stick cooking spray and heat over medium heat. In a small bowl, combine egg substitute, cheese, bell pepper, green onions and garlic powder. Pour egg mixture into skillet and scramble eggs. Once eggs are cooked, divide into tortillas and fold tortillas in half. Spray skillet with a non stick cooking spray. Cook quesadillas on each side for 4 minutes. Remove from heat and serve.
Prepare as indicated above. Remove from heat and allow to cool. Wrap individually in plastic wrap. Place in freezer bags, label and freeze. TO SERVE: Reheat in microwave for 30-60 seconds.
