Better Than The Freezer Aisle: Make Your Own Evol Fire Grilled Steak Quesadillas with Guacamole

When one of our readers suggested on our Facebook page that we try to make over one of the Evol freezer meals I was immediately drawn to the steak quesadillas (my favorite.) Quesadillas are a fantastically easy and inexpensive meal. So I was shocked to see that this single serving lunch purchased from the freezer aisle costs $5 at my local grocery store! I did not spend that to give them a try, but my homemade version was rather tasty. One way to save money is to make your own tortillas and to use some leftover steak from another meal. I do not have an exact price comparison since I used some items already in my pantry, but you could spend roughly and make quesadillas for 4-6 people instead of $5 for just one person.

Note: You may be concerned about freezing the guacamole, but this is one instance where we can learn from the big corporations. Just be liberal with the lemon juice and squeeze out all the air as directed. You may get a slight discoloration, but it will still taste fine after you stir. 

Make Your Own Evol Fire Grilled Steak Quesadillas with Guacamole

Ingredients:

  • 8 Homemade Flour Tortillas (large)
  • 1 cup flank steak, cooked and chopped (grill or pan fry)
  • 2 cups shredded cheddar cheese
  • 8 ounces black beans, drained and rinsed
  • 1 cup cooked brown rice
  • 0.5 cup salsa
  • 2 cups Guacamole
  • 0.5 Tablespoons olive oil

Directions:

Heat olive oil in a large skillet over medium heat. Meanwhile, layer one half of each tortilla with 2 Tablespoons steak, 1/4 cup cheddar cheese, 2 Tablespoons black beans, 2 Tablespoons cooked rice, and 1 Tablespoon salsa. Fold in half and carefully place in hot oil. Cook 2-3 minutes until browned. Flip with a spatula and cook another 2-3 minutes or until browned and cheese is melted. Remove to a plate or wire rack to cool. Repeat until all quesadillas have been cooked. Slice into triangles and serve with guacamole.

Freezing Directions:

Assemble and cook quesadillas as directed above.  When quesadillas are cooked and cooled, wrap individually in plastic wrap and divide among gallon freezer bags. Divide guacamole among pint freezer bags and place inside the larger bag. Label and lay flat to freeze. TO SERVE: Reheat quesadillas in the microwave for 30 seconds. Serve with thawed guacamole.

Servings:  8 quesadillas

    I never knew you could freeze guac! It doesn’t turn brown?

      Lisa – yes it can be done! Make sure you squeeze all of the air out of the bag when you freeze to ensure that it doesn’t turn brown.
