Mock Jimmy Dean Sausage and Pancake (GFDF)

Mindy @ onceamonthmeals.com, adapted from The Pioneer Woman

  • 32 links breakfast sausage
  • 3 cups gluten free pancake mix
  • 1 cup cornmeal
  • 0.125 teaspoon cinnamon
  • 1 large egg, beaten
  • 0.5 teaspoon vanilla
  • 3 cups water
  • 1 cup vegetable oil
  • 2 cups maple syrup (for serving)
  • wooden sticks
  • paper towels

Cook sausage in a skillet until cooked through.  Let cool on a paper towel. Combine pancake mix, cornmeal and cinnamon in a large bowl.  Add egg, vanilla and water, one cup at a time. Continue adding water (could be more than called for if batter is too thick) until batter is thick yet manageable for dipping. Add vegetable oil to a large pot and heat to 350 degrees F. The oil is ready when you drip batter in and it sizzles but does not brown/ burn. While the oil is heating you can put the sausages on the sticks. Dip the sausages (on a stick) into the pancake batter. Allow excess to drip off. Place the dipped sausage into the oil for 2-3 minutes. Using tongs or a spoon, turn constantly to ensure the sausage pancake stick does not stick to the pan. Let cool on a paper towel. Serve with warm maple syrup for dipping.

Freezing Directions:

Prepare as directed above.  Let cool on a paper towel. Place in a freezer bag, remove air and affix label. TO SERVE: Heat through in microwave for 45-60 seconds. Serve with warm maple syrup for dipping.

Servings:  16
