Blueberry Granola Pancakes

Since my son discovered maple syrup, pancakes have been a regularly requested item – for breakfast, lunch, or dinner!  Blueberry granola pancakes are filled with lots of good grains and even a little fruit so you don’t have to feel guilty about serving them for dinner if your child requests them.

Blueberry Granola Pancakes

  • 2 cups multigrain pancake mix (see mix recipe below)
  • 2 cups water
  • 2 tablespoons unsweetened applesauce
  • 1 cup frozen blueberries (do not thaw)
  • 1 cup granola
  • 1 teaspoon cinnamon

Multigrain Pancake Mix

  • 1/4 cup quick oats
  • 1 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/4 cup cornmeal
  • 1/8 cup unprocessed wheat bran
  • 1/8 cup toasted wheat germ
  • 1/8 cup white sugar
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda


In a medium bowl, combine pancake mix, water, and applesauce until batter is no longer lumpy.  Add blueberries, granola, and cinnamon, stirring until just blended.  Spray griddle or frying pan and heat on high setting.  Using about 1/2 cup of batter for each pancake, cook pancakes until bubbles form and edges turn brown.  Turn and cook on other side until pancakes are lightly brown.  Serve with fruit sauce, or maple syrup.

Freezing Directions:

Cool completely then transfer to gallon freezer bags.  To serve: Heat in microwave until heated through.

    Thanks for this recipe! So excited to try it Sunday morning before church! How well does the Mulitgrain Pancake Mix keep? I’d like to find a healthier version of the “just add …” mix to have on hand for the family. Thanks again!

    The mix will keep very well and can even be stored in an airtight container in the freezer. Mine keeps for a couple of months in the pantry with no problems.
