Breakfast Tortilla Roll


Frozen breakfast items are a hot commodity here. My daughter’s school begins super early, so there is rarely time to “cook” anything from scratch in the mornings. It is essential for me to have healthy, homemade frozen breakfasts that I can just grab instead of reaching for more processed foods. These little rolls are delicious with the Sriracha sauce, which of course I left off for the kids.

Breakfast Tortilla Roll

  • 8 each thin corn tortillas
  • 8 large eggs
  • 8 slices fat free or reduced fat cheese
  • to taste salt
  • to taste pepper
  • 2 teaspoons Sriracha sauce, optional
  • cooking spray


Spray a small and a medium nonstick pan with cooking spray. Heat the small pan over medium-low heat. Crack the egg, break the yolk and sprinkle with salt and pepper. Cook for about 2 minutes or until egg whites are firm enough to flip. Flip egg, continue cooking for 2 more mintes, until cooked through. Heat medium pan over medium heat. Add the corn tortillas one at a time and heat it for 30 seconds. Flip, top with cheese and cook for 1 more minute. Remove from heat, add Sriracha (0.25 teaspoon, if using) and top with egg. Roll tightly.

Freezing Directions:

Place tortilla rolls seam side down on parchment lined baking sheet. When rolls are completed and cooled, flash freeze. Once frozen, place in freezer bags, label and freeze. TO SERVE: Reheat in microwave 30 seconds at a time until heated through.

    Any cheese that comes in slices is already processed though…?

      Ally, you can get block cheese and slice it yourself if you’d like.

      You can buy presliced chedder, swiss monteray jack etc… if you want to save time. Or you can buy sliced cheese from the deli. Either way it’s brick cheese that has been sliced
