Buffalo Chicken Sliders with Celery Salad

  • 2 Tablespoons coconut oil #1
  • 0.33 cups carrots, diced
  • 0.33 cups celery #1, diced
  • 0.5 cups red onions, diced
  • 1 pound ground chicken
  • 2 Tablespoons hot sauce
  • 1 Tablespoons coconut oil #2
  • 1 Tablespoons GFDF Ranch mix
  • 0.33 cups Paleo mayo
  • 0.25 cups almond milk
  • 0.5 cups celery #2, sliced


Melt coconut oil #1 over medium heat. Add carrots, celery #1, and onions and cook until tender and browned, about 8 minutes. In a large bowl, mix cooked vegetables, chicken, and hot sauce. Form into small patties. Cook patties in skillet with coconut oil #2 for approximately 4 minutes per side. In a medium bowl combine ranch mix, paleo mayo, and almond milk. Serve sliders with celery #2 and ranch dressing mixture. 

Freezing Directions:

Prepare per above directions. Flash freeze sliders. Once frozen, divide among gallon freezer bags. Divide ranch dressing among pint freezer bags. Place ranch bags in slider bags, label and freeze. TO SERVE: Thaw. Reheat in microwave for 30-60 seconds. Serve with celery #2 and ranch dressing mixture.

    I actually snuck one of these as my midway-through-cooking-a-paleo-menu-day. Yum! Fresh and crunchy. And gave me the umph to keep going strong with my day of cooking.

    HEAVEN. Just had this for lunch and they are delicious. I feel like it needs a hefty salad on the side, though.

    Did a late month cooking day yesterday. My husband and I took these to work for lunch today and loved them. The amount of Frank’s was perfect for me. For those who want to taste the heat, you may want to add more. These are for sure a keeper!
