Cabbage and Winter Vegetable Soup


Warming up with a winter soup doesn’t have to mean loading on the calories.  Packed with vegetables and only 1 WW point, this soup is a new winter freezer staple!

Cabbage and Winter Vegetable Soup

tUsing a non stick spray, saute onions, carrots and garlic for 5 minutes.  Add beef broth, tomato paste, cabbage, okra, basil, oregano and salt & pepper.  Simmer for 5-10 minutes until all vegetables are tender.  Add zucchini and yellow squash and simmer an additional 5 minutes.  

Freezing Directions:

Follow directions above.  Allow soup to cool completely.  Divide between quart sized freezer bags (apx 1 cup of soup per bag).  Label and freeze.  To serve, thaw.  Reheat in microwave or on stovetop until warmed through.

Servings: 12 cups of soup
