Caprese Pasta Salad

 

Caprese salad is a quintessential summer dish. Garden fresh tomatoes and basil pair deliciously with fresh mozzarella and balsamic vinegar. Caprese salad is often served as a side dish, though, and isn’t always the easiest to transport. This Caprese Pasta Salad can not only be eaten as a main dish, but is delicious and portable enough to bring to your next potluck party.

Caprese Pasta Salad

Ingredients:

  • 1 pound bow tie pasta, cooked according to package
  • 1 cup cherry tomatoes, cut into fourths
  • 1 cup fresh mozzarella, cubed
  • 0.25 cup olive oil
  • 2 Tablespoons balsamic vinegar
  • 0.125 teaspoon salt
  • 0.125 teaspoon pepper
  • 2 teaspoons garlic, minced
  • 12 fresh basil leaves, chopped
  • 0.25 teaspoon dried oregano

Directions:

Combine all ingredients in a large bowl and serve.

Freezing Directions:

Place all ingredients in a gallon freezer bag. Label and freeze. To Serve: Thaw. Serve cold.

Servings: 4

    Sounds delicious. I never would have thought about freezing it though… Do the tomatoes and cheese retain their original (or close to original) texture?

    The cooked pasta freezes and thaws without falling apart or getting soft/soggy?

    So if I was going to make and freeze ahead of time, are you saying I would make the recipe as stated and then freeze, and take out a little before use and it would be ready to go? Or do you freeze and then add oil and balsamic after you take out of freezer?

    Also, how many does this recipe serve if being used as a side dish?

      Jen – All the ingredients, including the oil and balsamic are mixed together before freezing. To serve, it needs to thaw completely. If using as a side dish, you should get twice the amount of servings.

    Made this today. Tastes great, but was a bit disappointed that my mozzarella turned brown because of the balsamic vinegar. Darn! Wasn’t as pretty as I wanted it to be!

    Made the pasta tonight for a family bbq tomorrw.. added cucumber and it taste great..cant wait to try it again tomorrow!!!
