Carnitas Tacos


We eat Mexican food so often at my house that my two year old immediately asks for rice and beans when I tell him we are going out to eat.  However, unless you can find a little hole in the wall restaurant, eating Mexican food can be really expensive.  Making these Carnitas Tacos at home can save you money but more importantly, they are so simple and give you the opportunity to let everyone decorate their own tacos!

Carnitas Tacos

  • 3 pounds pork roast
  • 1.5 cups beef broth
  • 1 cups salsa verde
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 4 teaspoons garlic, minced
  • 1 teaspoons cumin
  • 1 Tablespoons chili powder
  • 12 flour tortillas


Place all ingredients in slow cooker.  Cook on low for 6-8 hours.  Remove pork from slow cooker and shred.  Serve in tortillas and top with favorite taco toppings.

Freezing Directions:

Divide all ingredients except tortillas into indicated number of freezer bags.  Label and freeze.  To serve: thaw in fridge.  Pour contents of bag into slow cooker and cook on low for 6-8 hours. Remove pork from slow cooker and shred.  Serve in tortillas and top with favorite taco toppings.

    Would you be able to cook this first then freeze the meat?

      Hi Lindsey, yes you can cook it first. When you reheat it, I would add some water or broth to the meat so it doesn’t dry out.

    Do all three pounds of meat go into one freezer bag or is this intended for larger meals? It’s just my husband & I so I’m not sure how to divide this up.

      If you are just serving you and your husband, you could split it between two or three freezer bags. The original recipe serves 6 people so you would have a lot of leftovers if not. Enjoy!
