Cheesy Ham Biscuit Lunch Muffins Recipe

The other day I had the pleasure of having lunch at a friend’s house where not only did my kids get all their energy run out, but she also served lunch! As I saw her whipping up this recipe I raised my eyebrow knowing my son would not eat it. However, we have a “try new things” policy so I let the thought pass and sat him down to lunch just the same. Imagine my surprise when he began digging into his lunch as if he had this food a million times before! I was shocked. And oh, so glad I hadn’t made a point of mentioning that he wouldn’t like them.

So, like any good blogger, I asked my friend to guest post the recipe! :) And like any good friend, she obliged. Here is Amy’s guest post:

I don’t know about you but lunchtime can be chaos at my house, Once A Month Mom told me that it should actually be called wrestling. The reason lunch can be so chaotic is because my kindergartner has just gotten home from school and my toddler is just getting up from his nap and wants to be carried around or entertained. So quick and easy lunches for my boys really can help me out!

I originally found this recipe on Kraft Foods site, so when we had a last minute playdate with one of my good friends and her kids I decided it was the perfect time to test it out.

Cheesy Ham Biscuit Lunch Muffins

  • 0.75 cup shredded cheddar cheese
  • 3-6 oz- lunchmeat ham (I used Brown Sugar Ham)
  • 1 can refrigerated biscuits (8-10 count)
  • 0.25 cup red peppers diced (optional)


Heat oven to 350. Spray muffin cups with cooking spray. Chop lunchmeat, mix with cheese and peppers in bowl. Cut each biscuit into 4-6 pieces. Add ham, I actually used my hands to mix it because a spoon was too rough. Spoon mixture into muffin cups.

Bake 15-20 minutes or until golden brown. Cool before removing from pan.

You can use any meat or cheese of your choice: ham, turkey, bacon, etc. Go get creative.

Freezing Directions:

Allow to cool. Or place on a cookie sheet and flash freeze. When partially frozen, place in a gallon freezer bag and freeze. To serve: Reheat in microwave for 30 seconds – 1 minute.

    THANK YOU!!! My daughter, who is 18 months, has made it very clear that she has no interest whatsoever in eating meat. When I saw this recipe I thought we might be able to sneak it in and imagine my surprise when she didn’t just eat it but was excited about it!!! I had to try hard not to make too much of a scene from my joy of her eating meat as to not scare her off. I think these might become a staple in my picky little eaters diet for a while to come!

    We tried these today, and they were so tasty! One tip – be VERY, VERY generous on the cooking spray. I sprayed the muffin tins, and they still stuck something awful. I’ll have to make more next time – my crew didn’t get enough. :-)

    I know this is an old post, but we do something similar with pizza ingredients. Cut the biscuits, add pepperoni, cheese and however much pizza sauce you want. I put it in a small cake pan, but muffin tins are a GREAT idea!!! Then bake until cook thru. I also do garlic bread like this, for pasta nights. It is a great pull apart sidedish!

    These are a hit with my 17 month old toddler twin boys! I did it the first time just as written…worked wonderfully!I had turkey and spinach on hand and did those in it and it still worked great! Thanks so much!

    We try to stay gluten-free, but I loved this idea for some middle schoolers burnt out on school lunches. I used a GF biscuit mix and did a drop biscuit version (mix all and drop on lined cookie sheet). They were wonderful! My kids will be so excited about lunch tomorrow! The only thing I would do differently would be to somehow make sure the meat was equally distributed (maybe use a lot more) so that there is a good portion of protein in each biscuit.

    Awesome! Making these right now. I need to use up some ham so I am making them according to the recipe, but I passed over pepperoni and thought that with mozzarella cheese and pizza dipping sauce would be awesome also!
