Cheesy Sausage Pasta Bake

  • 16 ounces bowtie pasta, uncooked
  • 2 Tablespoons olive oil
  • 1.25 cups red onion, diced
  • 2 teaspoons garlic, minced
  • 1 teaspoons oregano
  • 0.5 cups white wine
  • 14.5 ounces diced tomatoes, drained
  • 12 ounces andouille sausage, sliced
  • 3 cups kale, roughly chopped
  • 2 cups shredded colby jack cheese
  • 0.5 cups grated parmesan cheese


Cook pasta according to package directions. Heat olive oil in a skillet over medium heat. Sauté red onion for 5 minutes until translucent. Add garlic and oregano and continue to cook for an additional minute. Deglaze wine by turning heat to high, adding wine, and stirring until wine begins to boil. Reduce heat to low, add tomatoes, and continue to simmer for 10 minutes. Add sausage and kale to pan and cook until kale begins to wilt. Remove from heat, add pasta, and colby jack cheese, stirring to combine. Transfer to an 8×8 baking pan and top with parmesan cheese. Bake at 350F for 20 minutes, or until heated through. 

Freezing Directions:

Prepare per above directions, but do not bake. Cover pan tightly with foil. Label and freeze. TO SERVE: Thaw. Bake at 350F for 20 minutes, or until heated through.

    This definitely needs a 9×13 pan, not an 8×8. :) Just cooked it and it looks yummy!! :)
