Cheesy Tuna Mac

  • 8 ounces elbow macaroni
  • 2 Tablespoons butter
  • 0.5 medium yellow onion, chopped
  • 2 Tablespoons flour
  • 1 teaspoons paprika
  • 1 cups chicken broth
  • 6 ounces processed cheese (Velveeta), cubed
  • 6 ounces chunk light tuna packed in water, drained


Cook macaroni according to package directions. Drain and set aside. Melt butter in skillet over medium heat. Sauté onions until they are translucent. Add flour and paprika, cook for 1 minute. Stir in broth and simmer for 2 minutes or until sauce begins to thicken. Add cheese spread and stir until melted. Stir in tuna and pasta, tossing to coat.

Freezing Directions:

Prepare per above directions. Allow to cool. Divide among freezer bags, label and freeze. TO SERVE: Thaw. Microwave for 1-2 minutes until heated through.
