Cherry Maple Muffins

  • 0.5 cups maple syrup
  • 0.75 cups greek yogurt
  • 0.25 cups sugar
  • 3 large eggs, lightly beaten
  • 1 teaspoon vanilla
  • 0.75 cups all purpose flour
  • 0.75 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 0.25 teaspoons nutmeg
  • 0.25 teaspoons salt
  • 0.25 cups applesauce
  • 2 cups frozen cherries, thawed and patted dry


In a large bowl, combine syrup, yogurt, sugar, eggs and vanilla. In a separate bowl, sift together flour, baking powder, cinnamon, nutmeg and salt. Gently add the wet ingredients into the dry ingredients until incorporated, being careful not to over mix. Gently fold in applesauce. Fold in cherries. Pour batter into lined muffin cups, filling 3/4 full. Bake 350 for 20 minutes or until tops are golden brown.

Freezing Directions:

Prepare and bake muffins as per directions above. Transfer muffins to wire rack and allow to cool completely. Divide into gallon freezer bags, label and freeze. To serve: Thaw. Serve room temperature or wam in microwave, if desired.

Servings:  6 (2 muffins per serving)
