Skinny Chicken Poblano Soup

Ingredients:

  • 4 cups chicken broth
  • 4 Tablespoons poblano peppers, seeded and diced
  • 0.625 cups onion, chopped
  • 1 Tablespoons cumin
  • 0.5 Tablespoons chili powder
  • 2.67 cups boneless skinless chicken breast, cooked and shredded
  • 0.25 cups cilantro, chopped
  • 0.25 cups lime juice

Directions:

In a large stock pot, combine chicken broth, poblano peppers, onion, cumin and chili powder. Bring to a boil. Add chicken, cilantro and lime juice. Reduce heat to simmer, cover and cook for 2 hours.

Freezing Directions:

Prepare soup per above directions. Allow to cool completely. Divide into quart freezer bags, label and freeze. TO SERVE: Thaw. Reheat in microwave.

    Isn’t 2 hours a big long cooking time considering the ingredients are technically already cooked? I would think 30 minutes should cover it.

      Hi Valerie! The two hours will allow the flavors to combine more and really enhance the dish but from an eating standpoint, you could certainly safely eat it before then. Enjoy!

    Is it possible to cook this in my slow cooker?

      You sure could. Since the chicken is already cooked when you add it to the mix, I would cook it at low for about 4 hours. If you try it this way please give us some feedback on how it works for you! Enjoy!
