Chocolate Chip Hard Boiled Egg Cookies

Easter is over and you are stuck with a dozen (or more) hard boiled eggs.  The possibilities seem limited: egg salad, deviled eggs, afternoon snack.  But what about putting them into your favorite chocolate chip cookie! Unheard of….gross even. But rest assured, the eggs will disappear when the cookies are baked, leaving you with the delicious flavors of the classic chocolate chip cookie.

Chocolate Chip Hard Boiled Egg Cookies

  • 2.75 cups flour
  • 1 cup cold butter, cut into chunks
  • 1 teaspoon salt
  • 0.5 teaspoon baking soda
  • 0.75 cup white sugar
  • 0.5 cups brown sugar
  • 0.5 tsp vanilla extract
  • 2 hard boiled eggs, peeled and finely diced
  • 1.75 cups milk chocolate chips


Preheat oven to 350F.  In a food processor, combine butter and flour.  Pulsing just until mixture is combined and crumbled.  Add the salt and baking soda, pulsing until combined.  Add white sugar, brown sugar, vanilla and hard boiled eggs.  Pulse until mixture combines completely.  Place mixture into a large bowl, and gently fold in chocolate chips.  Don’t worry if egg whites are still visible, they will disappear as they bake.  Form dough into balls with approximately 2 Tablespoons of batter.  Place on parchment paper lined baking sheets.  Bake 14-16 minutes or just until the edges of the cookies start to brown.  Let cookies sit on baking sheet for 3-5 minutes before transferring to a cooling rack.  

Freezing Directions:

Allow cookies to cool completely.  Place in gallon sized freezer storage bag.  Label and freeze.  TO SERVE: Thaw on countertop and enjoy!
