Coconut Lime Chicken

I don’t know about you, but at my house we LOVE a new marinade for our grilled chicken.  Even though we have so many we love (this one is my favorite right now), we are always looking for something new.  My husband was a little hesitant with this marinade because he doesn’t care for coconut.  However, the taste is so mild he actually enjoyed it.  The most important part of the recipe is to make sure you let it marinade for at least 12 hours.  Whip this up the night before your next barbeque and you’ll be ready to go!

Coconut Lime Chicken

Ingredients:

  • 1.5 pounds boneless chicken breast
  • 0.5 cups lime juice
  • 0.75 cups coconut milk
  • 2 teaspoons garlic, minced
  • 1 teaspoons ground ginger
  • 2 teaspoons sugar
  • 0.25 teaspoons cayenne pepper
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 teaspoons vegetable oil

Directions:

Combine all ingredients except chicken in a large bowl.  Place chicken in a dish and pour marinade over chicken to coat well. Cover tightly.  Allow to marinate overnight or for at least 12 hours.  Preheat grill to medium high heat.  Grill for 8-9 minutes on each side, until cooked through.

Freezing Directions:

Place all ingredients into a gallon freezer bag, label, and freeze.  To serve: thaw in fridge.  Preheat grill to medium high heat.  Grill for 8-9 minutes on each side, until cooked through.

    This looks divine. How are the Brussels sprouts prepared? They look a bit delish as well!

      Laurie, it was my first time doing Brussel sprouts and I loved them! I roasted them using olive oil, salt, pepper, and Parmesan. I hear they are awesome with bacon but I didn’t have any at the house that day.

    Can I use ubsweetened coconut milk from the carton? Or should it be canned?
