Ingredients:

  • 1 cup water

    The line up of chopped ingredients

  • 3/4 cup uncooked couscous
  • 3/4 cup dried cranberries
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1/2 cup chopped seeded cucumber
  • 1/4 cup green onions, sliced thinly
  • 3 Tablespoons balsamic vinegar
  • 1 Tablespoon olive oil
  • 2 teaspoons dijon mustard
  • 1/8 teaspoon ground black pepper
  • 1/4 cup almonds, slivered

Directions:

In a saucepan, bring the water to a boil. Stir in the couscous. Remove from heat, cover and let stand for five minutes. Fluff with a fork. Cool for 10 minutes. In a bowl combine the couscous, cranberries, carrots, celery, cucumber, and green onions. In a small bowl, combine the vinegar, oil, mustard and pepper. Pour over couscous mixture; mix well. Cover and refrigerate. Stir in almonds just before serving.

Freezing Directions:

In a saucepan, bring the water to a boil. Stir in the couscous. Remove from heat, cover and let stand for five minutes. Fluff with a fork. Cool for 10 minutes. In a bowl combine the couscous, cranberries, carrots, celery, cucumber, and green onions. Place couscous mixture into a gallon freezer storage bag.  In a small bowl, combine the vinegar, oil, mustard and pepper. Place dressing in quart size freezer storage bag.  Place almonds in pint sized freezer storage bag.  Place quart and pint storage bags into gallon sized bag, seal, label and freeze.  To serve:  Thaw, removing smaller bags from gallon sized bag.  Transfer couscous mixture to serving bowl.  Knead quart sized bag of dressing, then pour over top couscous.  Stir to combine.  Refrigerate until serving.  Top with almonds right before serving.
