Cranberry Nut Protein Bars

These seasonally flavored granola bars are packed with nuts for protein. When made ahead they make a super quick, healthy breakfast. But the best part is the way they smell when they are baking!

Cranberry Nut Protein Bars

  • 0.33 cups maple syrup
  • 0.33 cups nut butter
  • 0.25 cups unsalted butter
  • 0.25 cups dark brown sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoons salt
  • 0.5 teaspoons pumpkin pie spice
  • 2.5 cups old fashioned oats
  • 0.25 cups almonds, sliced
  • 0.25 cups pecans, chopped
  • 0.25 cups pumpkin seeds
  • 0.5 cups dried cranberries, chopped
  • Cooking spray


Spray a 9-inch square pan with cooking spray. Heat maple syrup, nut butter, unsalted butter, brown sugar, vanilla extract, salt and pumpkin pie spice in a sauce pan until mixed all the way. Remove pan from heat and add in oats, almonds, pecan and cranberries; mix well with a spatula. Pour oat mixture into oiled pan and push down so it is tightly packed. Allow to cool. Push mixture down into pan once more after cooling. Bake uncovered for 30 minutes at 350. Allow to cool completely. Cut into 10 squares and serve.

Freezing Directions:

Prepare as directed above. Place on a cookie sheet and flash freeze. Place in freezer bags, remove air, label and freeze. TO SERVE: Thaw and enjoy at room temperature.

    Just put this in the oven. Smells delish! I love having healthy grab and go options for breakfast. I try to eat vegan, though…any suggestions for replacing the butter?
