Cranberry Salsa Dip

Cranberry is yet another of the holiday flavors that I love.  It seems that I love all holiday flavors, but that’s another story! I ran across a few variations of this recipe on Pinterest and was so anxious to try it I had my step daughter run to the store and get the ingredients. Unfortunately I didn’t realize that the dip needs to sit in the fridge for a while so the sugar takes away some of the tart flavor of the cranberries.  So…..hopes of eating it that night were dashed, but it was ready the next day, as were my bag of tortilla chips….and I wasn’t disappointed! The flavor combination of the cranberries, cilantro and jalepeno were perfect, not to spicy yet with a little hint of sweetness.  It is the perfect late afternoon snack after your big holiday dinner!

Cranberry Salsa Dip

Ingredients:

  • 1 12 oz package fresh cranberries, washed
  • 1/4 cup green onion (tops and all), chopped
  • 1/4 cup cilantro leaves (not stems), chopped (I use my kitchen scissors for this
  • 1 small jalapeño pepper
  • 1 yellow bell pepper, finely chopped
  • 1 1/4 cup sugar
  • 1/4 tsp cumin
  • 2 Tbsp lemon juice
  • 2 – 8 oz packages cream cheese

Directions:

In a food processor, chop cranberries until fine.  Chop green onion, cilantro and peppers.  In an airtight container, combine chopped cranberries, onion, cilantro, jalapeno, sugar, lemon juice and cumin.  Refrigerate for at least 4 hours.  When you are ready to serve, evenly spread cream cheese on a platter to about 1/8″ thickness. (This makes a LARGE platter amount) Pour cranberry mixture over the top.  Serve with tortilla chips, or your favorite snack cracker.  If you like a little more “kick” to your dip, substitute habanero or ghost chile peppers for the jalapeno, and additional cumin or other spices.

Servings: 1 large platter of dip

    How does this turn out if you use frozen cranberries? Anyone tried it?

      I have never used frozen cranberries. It may add a little more liquid to the overall salsa. If you try it let us know how it works!
