Crispy Buffalo Tofu Sandwich

Ingredients:

  • 2 large eggs
  • 2 cups breadcrumbs
  • 14 ounces tofu, pressed and cut lengthwise
  • 2 Tablespoons olive oil
  • 0.5 cups buffalo sauce
  • 0.33 cups blue cheese dressing
  • 4 each sandwich rolls

Directions:

Place eggs in a shallow bowl and breadcrumbs on a plate. Dip each piece of tofu in egg. Dip each piece of tofu in breadcrumbs, making sure they are entirely covered. Heat oil over medium heat. Cook each piece of tofu for 5-7 minutes on each side, until brown. Top each tofu piece with buffalo sauce. Spread blue cheese dressing on top of sandwich rolls. Serve tofu on sandwich rolls. 

Freezing Directions:

Cook tofu per above directions. Top each tofu piece with buffalo sauce. Flash freeze tofu. Place frozen tofu on sandwich rolls, then wrap each sandwich individually in plastic wrap. Place in gallon freezer bags, label and freeze. TO SERVE: Thaw. Heat sandwich in microwave for 1 minute, or until hot. Top with blue cheese dressing.

    Have you made a gluten free version of this? I have recently found out that I have a gluten sensitivity and a red meat allergy. I’m constantly looking for ways to get enough protein every day.
