My 2-year-old is addicted to bagels. It is completely my fault. Most women, in my understanding, have a go-to food while pregnant. It’s that food that you savor and is always “safe.” My go-to food was a bagel with cream cheese. Usually an “everything” bagel or sourdough bagel. They say kids tend to like the music you play while pregnant as well as the food you eat. For Bug, this is so true. She is a 2-year-old and adores The Beatles and, of course, devours bagels and cream cheese with abandon. We ask her every morning what she would like for breakfast. If we don’t give her any choices, she ALWAYS asks for a bagel.

With that in mind, I thought it might be best to create a somewhat more balanced spread for her bagel. She’s a great veggie eater in general, but having her eat only bread and cheese for breakfast every morning doesn’t seem quite right. So, with one of our favorite condiments, tzatziki, in mind, I created this cucumber breakfast spread. The kids also like it, with a bit more yogurt to thin it, as a vegetable dip. We dip broccoli, carrots, and even Sweet Potato Chips.

Cucumber Breakfast Spread

Ingredients:

  • 8 ounces cream cheese
  • 0.25 cups yogurt, plain
  • 0.5 cups cucumber, diced finely
  • 2 teaspoons garlic, minced
  • 1 teaspoons dill
  • 0.25 teaspoons salt
  • 0.25 teaspoons pepper

Directions:

Combine ingredients and serve on bagels, toast or English muffins. Or add an additional 1/4 cup of yogurt to use as a creamy dip for vegetables or chips.

Freezing Directions:

Divide among freezer bags. Thaw to serve on bagels, toast or English muffins.

    I’m smiling as I read this post. I eat bagels ALL OF THE TIME. Having said that, my own daughter will eat a turkey sandwich on a bagel, she’ll make a pizza bagel, she’ll eat scrambled eggs on a bagel etc. The first time I left her alone overnight, she ate something on a bagel each meal I was gone LOL.

      Hah, that’s hilarious. Ours loves pizza bagels. She’s weird about eggs in general, but I’ll have to try eggs on a bagel and see if the bagel overpowers the egg for her.
