Diet February 2011 OAMM Menu (OAMC, Freezer Cooking, Bulk Cooking, Power Cooking)

I’m absolutely thrilled with the response from the January Diet OAMM menu! There were a few kinks to work out last month so I want to thank you for giving me some grace on my very first menu. You all have been so encouraging!

February’s menu is diverse in both flavor and ingredients, so I hope your taste buds love it as much as I have so far. If you’re cooking for more than one person, keep in mind that most of the recipes can be frozen in larger quantities and cooked the day your are eating them. It’s completely customizable to you and your family – that’s the beauty of freezer cooking!

  • Included below are the menu items that we will be preparing as part of our Once A Month Cooking (OAMC) BIG DAY. In the printable DIET February 2011 Recipe Cards (UPDATED Feb 20, 2011 to reflect Real link, sorry for the mix up) the menu items are listed as single, double, or quadruple depending on how much we need to make on the BIG DAY. Labels

Sample Label

These customized labels are designed specifically for the DIET February 2011 Once A Month Mom Menu. They contain the name of the dish, serving instructions for preparing the dish on your serving day, nutritional information AND Weight Watchers Points. They make preparation of the dishes hassle free and staying to your eating plan a cinch.

These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

Facebook Fan Party:

OAMM Facebook Fan Page Party – February 20 2011, 9:00 pm – 9:30 pm EST – We will be able to chat via video AND messaging during the event through FACEBOOK! How cool is that? You can also see other past recordings from that tab as well.

Instructions for viewing live-stream:

  • Go to the Once A Month Mom Facebook Fan Page.
  • Click on the “Stickam” Tab at the top.
  • Hit “view live recording” – If I am live streaming it will show you what is happening in progress. If I am not live streaming at the time, you will have the option to click through other videos that I have recorded in the past.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! Here is a little bit about this month’s test cooks:

  • Candice S – She is a mother of 2 boys, 6 and 5. She works full time outside the home with a long commute. The ability to use OAMM and its services provides her so much time and money savings in an already hectic day.

    I LOVE LOVE LOVED the January diet menu and am SO looking forward to this menu! Quick question – when I download the shopping list – it has “ground turkey”, but says “0″ for quantity. Could you tell me what that is supposed to be?

    On the printable menu, I didn’t see nutrition information for the Chicken Orzo Skillet. I calculated the points plus, and it is 10 if anyone is interested.

    I went shopping for my big OAMC day today and I spent about 140 on just the diet menu for one person. What is the target price for the diet menus? I shopped the commissary :o) GREAT deals on all of the veggies save rhubarb they didn’t have any. I also have some of the things on hand already.

    What are the freezing directions for the chicken orzo skillet and honey dijon pork? Most people could probably figure them out but im new to this and i never cook orzo or pork so im not sure how to package it. Thanks.

        I should have specified, the recipe cards dont have freezing instructions and the instruction list just says to package according to directions.

          Ack. Sorry about that. We are working to get that fixed ASAP. I will let you know when it has been fixed on the recipe cards.

          I think we have it fixed. The original recipe cards that were linked up were NOT the right recipe cards. I am not exactly sure how that happened but am extremely grateful to you for pointing it out. They should be fixed now. However, you will want to go back and reprint or adjust the cards for your family’s serving needs.

    The chicken, sweet pepper and kale wraps were good, but they lacked a little zing. Maybe marinate the chicken in balsamic dressing or add a dijon mustard dipping sauce…. I made mine with fat free yogurt a dash of red wine vinegar and some mustard… added a nice zing.

    the crock-pot honey Dijon pork recipe also works well with chicken :) and Smells really good! my house still smells yummy from it!

    Thanks so much Tricia, like I said, im sure the veterans have this stuff down but i am still learning! And the recipes all sound great, including the Traditional menu. I might have to make that one when i lose these last 15 lbs!

    So, you eat the same meals over and over all month? Maybe I’m picky, but I need more variety than this!

      I totally understand your point! If you make a completely different recipe for each meal every day of the month, then my hats off to you…you are super woman! There are many different options with freezer cooking, though. Most recipes on the menu have about 4 servings; so you can eat the meal once a week, save it for the next month or share with a friend. If you’re cooking for a family of two or more, you can make one menu and then you could eat the meal once or twice throughout the month. Breakfast recipes, on the other hand, have more servings but most people that I’ve polled don’t usually have much variety for that meal. Another option would be to just use the menu as an idea box and incorporate some of the recipes into your usual routine.
