Finger Licking Good Grilled Cheese Rolls
If you are a “no crust” kinda family, then these little rolls will become a favorite. Quick and easy prep, and various ways to reheat make these a perfect “go-to” meal or snack. As the aroma of classic grilled cheese wafts through your house, don’t be too surprised if none actually make it to the freezer!
Grilled Cheese Rolls

- 12 slices whole wheat bread
- 12 slices american cheese
- 4 Tablespoons butter
- 6 Tablespoons cream cheese, softened
Using a cutting board and a bread knife, cut off the crusts of each slice of bread. (Don’t throw them away – save them to make homemade bread crumbs!) Flatten each of the bread squares using a rolling pin. Spread 1/2 tablespoon of cream cheese on each bread square, following by a slice of cheese. Roll up bread, pressing tightly while rolling. In a large skillet, heat butter over medium heat. Place rolls seam side down in skillet and cook for approximately 5 minutes, rolling so that each side has browned and cheese is melted. Transfer to a paper towel lined cooking rack. Cool slightly before serving.
Follow directions above. Cool completely. Transfer to a baking sheet and flash freeze. After frozen, transfer to quart size freezer storage bag. Label and freeze. TO SERVE: Remove desired number of rolls from bag. Reheat in microwave, oven or skillet until heated through.
