Flank Steak for Two
Date nights are amazing! When the usual dinner conversation is punctuated by spitting and spills, it is nice to have some quiet time for a real conversation with the person you love. But during some seasons of life it is tough to actually go out on a date (in our case we have no family in town and one baby still nursing). My husband and I finally decided that regular “date night in” was better than no date night at all. We’ve had so much fun when we cook something special, light some candles, and pretend like we got a table at a really fancy restaurant. We just wait until the kids are in bed.

This recipe is easy enough to prepare the day of, or simplify even further by incorporating it into your once a month cooking day. Drizzling the brightly colored sauce over the juicy steak will make you feel like a professional chef. If that doesn’t get you, the fresh, tangy flavor will. Put together a nice soup or salad for a starter. Whip up a favorite side or two (we had roasted potatoes), a dessert, and you have quite an impressive three course meal! No lines, no noise, and no tip. Just you and your honey. If you’re lucky like me, he’ll even help cook and clean up.
Flank Steak with Chimichurri Sauce

- 1 lb. flank steak
- 2 tablespoons olive oil
- .25 teaspoon salt
- .25 teaspoon pepper
- 3 teaspoons garlic, chopped (Chimichurri)
- 1 teaspoon salt (Chimichurri)
- .25 cup parsley, fresh, coarsely chopped (Chimichurri)
- .25 cup cilantro, fresh, coarsely chopped (Chimichurri)
- 2 tablespoons rosemary, fresh, coarsely chopped (Chimichurri)
- 2 tablespoons lime juice (Chimichurri)
- 5 tablespoons olive oil (Chimichurri)
Combine chimichurri ingredients in a food processor or blender until blended. Season steak with olive oil and salt and pepper. Grill in grill pan over high heat for about 2-3 minutes per side for medium rare. Let sit on plate for 5 minutes. Slice and serve topped with chimichurri.
Combine chimichurri ingredients in a food processor or blender until blended. Place into pint freezer bag along with flank steak in gallon freezer bag and freeze until ready to serve. TO SERVE: Thaw in refrigerator overnight. Remove steak from refrigerator 30 minutes before cooking to come to room temperature.
