Freezer Bread & Butter Pickles Recipe That Won’t Pickle Your Labor Day Picnic

I love pickles, especially bread and butter pickles, so to find out they could be made and frozen was an amazing epiphany for me. I was so excited that I could turn my excess produce into a great picnic accompaniment. I saw and adapted this Freezer Pickle recipe because it looked the most appetizing and easiest to me. I had to make a few spice changes but was so pleased with the changes. One whole batch of these never made it to the end of the week in my refrigerator!

So if you are having a picnic this weekend and some extra cucumbers laying around considering throwing this recipe together to be served along side your favorite picnic entrees.

  • 4 Cups of Sugar
  • 4 Cups of Vinegar
  • 1/3 Cup of Kosher Salt
  • 1 tsp of Celery Salt
  • 1 tsp of Mustard Seed
  • 1 tsp of Ginger
  • 1 gallon Cucumbers, sliced
  • 4 medium Onions, sliced


Place cucumbers and onions in a large bowl or container alternate onion and pickles. In a separate bowl, mix together all other ingredients until the sugar is dissolved. Do not heat or cook. Pour liquid mixture (brine) over the cucumbers and onions. Refrigerate covered for 48 Hours. Stir the pickles after 24 hours to mix well. Place in freezer containers (I used plastic 16 oz containers) and freeze. Without the food vac, they just wouldn’t last as long in the freezer.

    Looks Yummy! and No Fuss! If I had a gallon of cucumbers laying around, I’d be making this up tonight! I’m saving this recipe for a windfall of cukes!

    Now, any ideas for an abundance of fresh figs???
    I’ve mad a bunch of preserves already…looking for some new ideas…

    I made these today and they came out fabulous!!!!! I, of course, still need to let them refrigerate before freezing, but the brine is wonderful and delicious all the same. Can’t wait to taste them after they cure in the fridge :) FYI, I spent about 4 dollars on a bag of pickling cukes and got a gallon sliced, easily. SO worth it!
