Garlic and Chive Quinoa Cakes

  • 2.5 cups cooked red quinoa
  • 3 large eggs, beaten
  • 1 Tablespoon garlic, minced
  • 0.25 teaspoons salt
  • 0.25 teaspoons pepper
  • 0.25 cups shallots, diced
  • 0.125 cups chives, chopped
  • 0.67 cups shredded mozzarella cheese
  • 0.33 cups shredded Parmesan cheese
  • 0.25 cups all purpose flour
  • 0.25 cups panko bread crumbs
  • 2 Tablespoons olive oil


Mix quinoa, eggs, garlic, salt, pepper, shallots and chives in a bowl. Add mozzarella, Parmesan, flour, bread crumbs and mix. Let stand for 5 minutes. Press the mixture into 12 round cakes. Heat olive oil in pan until shimmering. Saute 6 patties at a time, flipping halfway through until dark brown (about 5 minutes per side). Place on paper towels after cooking to drain excess oil. Serve warm.

Freezing Directions:

Prepare as directed above and cool completely. Place in gallon bags and flash freeze. TO SERVE: Heat in microwave for 90 seconds.

    We absolutely love these! We have them as part of a regular meal (potatoes, gravy, veg, etc.) or even on crusty bread as a sandwich with Ranch Dressing or tartar sauce and fries. Excellent!

    My toddler loves these… making another batch tonight! Sometimes we add a dollop of sour cream when serving.

    These were great! I made a herbed cream sauce to top them! Even my 5 year old loved then!
