GFDF Knock Off PF Changs Chicken Lettuce Wraps

This delicious “unsandwich” has no need for gluten free bread!  Deliciously seasoned ground chicken, water chestnuts and peanuts are served in a crunchy leaf of lettuce.  You will quickly change your mind about the definition of a sandwich after tasting this lettuce wrap.

Gluten Free Dairy Free PF Changs Chicken Lettuce Wraps

  • 2 Tablespoons olive oil
  • 1 pound ground chicken
  • 0.66 cup onion, chopped
  • 0.125 teaspoon salt
  • 0.125 teaspoon pepper
  • 2 teaspoons minced garlic
  • 2 Tablespoons ginger, peeled & minced
  • 2.5 Tablespoons gluten free soy sauce
  • 4 teaspoons rice vinegar
  • 1 Tablespoon sesame oil
  • 1 Tablespoon peanut butter
  • 0.5 Tablespoon water
  • 0.5 Tablespoon honey
  • 2 teaspoons chili garlic sauce (ensure GF)
  • 0.125 teaspoon pepper
  • 0.5 cup green onions, chopped
  • 4 ounce chopped water chestnuts
  • 0.25 cup peanuts, chopped
  • 10 large lettuce leaves, rinsed & patted dry


Heat oil in a large skillet and add chicken, onion, salt, pepper. Next add garlic and ginger and cook until chicken is no longer pink. In a microwave safe bowl, combine soy sauce, rice vinegar, oil, peanut butter, water, honey, chili garlic sauce and pepper. Microwave for 20 seconds and stir until smooth. Add to skillet. Add green onions and water chestnuts and cook until onions are soft and water chestnuts are heated through. Sprinkle with peanuts.  Scoop mixture into lettuce leaf.  

Freezing Directions:

Prepare mixture and let cool.  Keep lettuce leaves for serving day.  DO NOT FREEZE LETTUCE.  Place chicken mixture in a freezer bag.  Remove as much air as possible, then label and seal.  TO SERVE:  Thaw.  Heat chicken mixture through and serve in a lettuce leaf.

    These are amazing. I have been loving the leftovers too. Great lunch and the recipe makes a ton! Instead of freezing into dinner portions, you could portion out lunch portions and just pack lettuce and some brown rice or quinoa and a piece of fruit. YUM!!!

    Honestly, these weren’t like PF Chang’s wraps…but they were super tasty! They’re so good that I’ll be using them for my freezer meal exchange group. :D Happy tummies!
