Gluten Free Dairy Free Chicken Broccoli Chowder

In a large stockpot, bring chicken broth to a boil. In a skillet, heat olive oil. Add onion and celery and saute until onions are translucent. Add garlic and continue to saute. Add onion, celery, garlic mixture to boiling broth. Add broccoli and carrots to broth mixture. Cover and simmer 10 minutes or until broccoli and carrots are tender. In a small bowl combine almond milk and flour. Add to soup mixture. Bring soup to a boil and continue to boil for 1 minute. Add chicken, water, parsley, basil, salt and pepper. Continue to heat until warmed through, about 10 minutes.

Freezing Directions:

Cook as directed above. Allow to cool completely. Divide among quart freezer bags, label and freeze. TO SERVE: Thaw. Reheat in microwave for 1-2 minutes.

    Would I be able to use rice milk in place of almond milk in this recipe?
