Gluten Free Dairy Free Chicken Fiesta Soup

 

Fall is coming!!  It depends on where you live, but here in the Midwest the temps are dropping.  So I’m stocking the freezer with soups, pumpkin muffins and hearty slow cooker meals.  It doesn’t matter where you live though, everyone is sure to enjoy this delicious Chicken Fiesta Soup.  It is easy to prepare and easy to freeze, so take your pick on how you want to make it!  Straight to freezer or straight to the table, it makes no difference!

Gluten Free Dairy Free Chicken Fiesta Soup

Ingredients:

  • 4 cups chicken, cooked and shredded
  • 15.25 ounces canned corn
  • 3.75 cups enchilada sauce (GFDF) or Make Your Own
  • 8 ounces chopped green chiles
  • 14.5 ounces canned diced tomatoes, drained
  • 14.5 ounces chicken broth (GF)
  • 1 cup yellow onion, chopped
  • 1 teaspoon ground cumin (GF)
  • 1 teaspoon chili powder (GF)
  • 1 teaspoon black pepper
  • Additional desired toppings such as corn chips, dairy free sour cream and dairy free cheese.  

Directions:

Combine all ingredients and place in a slow cooker.  Cover and cook on low for 6-8 hours.  Serve with corn chips, dairy free sour cream and dairy free cheese (if desired).

Freezing Directions:

Place chicken in a gallon size freezer bag.  Combine remaining ingredients and place in freezer bag.  Ensure bag is evenly mixed.  Remove as much air as possible, label & seal.  TO SERVE:  Thaw.  Place in a slow cooker.  Cover and cook on low for 6-8 hours.  Serve with corn chips, dairy free sour cream and dairy free cheese (if desired).

    I have a soup like this that I make. My kids don’t like soup, so I sue a slotted spoon to pull out meat and veggies and use them to make nachos.

    My family loved this dish. I added a can of black beans and it was perfect!
