Gluten Free Dairy Free Chicken Noodle Soup

Chicken and noodles is the ultimate comfort food in my opinion.  Don’t worry that you have to give it up now that you are gluten free and dairy free, this recipe is no problem!  It is perfect for a crisp fall day served with gluten free toast.

Gluten Free Dairy Free Chicken Noodle Soup

Ingredients:

  • 5 cups gluten free chicken broth
  • 10.75 ounces cream of chicken soup (GFDF)
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup carrots, chopped
  • 1/2 cup green onions, sliced
  • 1 3/4 cup corn, drained
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups chicken, cooked & chopped (serving day)
  • 1 1/2 cups gluten free noodles (serving day)

Directions:

Place all ingredients in slow cooker except chicken and gluten free noodles.  Stir to combine.  Cover and cook on low for 5-6 hours. During the last hour add the chicken and the noodles.

Freezing Directions:

Combine all ingredients minus serving day ingredients.  Place in a gallon size freezer bag.  Remove as much air as possible, label & seal.  TO SERVE:   Place ingredients of bag in slow cooker.   Cover and cook on low for 5-6 hours.  During the last hour add the chicken and the noodles.

Servings:  8

    In my opinion, a recipe for soup, should not contain ready-made soup.

      Hi Smee, yes it can seem silly to use soup in a soup. However, sometimes it’s an efficient and quicker way to create the consistency in your soup rather than using something like cream (then it wouldn’t be dairy free).
