Gluten Free Dairy Free Chicken Salad Lettuce Wraps

 

I’ve said it once, and I’ll say it again, lunch is a challenge. Especially when you cut out gluten and dairy!  Summer time is full of delicious salads and lettuce leaf wraps. This recipe is one that will not disappoint.  It is a new and fresh spin on traditional chicken salad with no mayo involved.  You just might change your mind about lunch after you try this!

Gluten Free Dairy Free Chicken Salad Lettuce Wraps

Ingredients:

  • 1 cup chicken, cooked & chopped
  • 4 Tablespoons red grapes, chopped
  • 6 Tablespoons apples (Fuji, Red Delicious, Gala), chopped (peel still on)
  • 4 Tablespoons peanut/ almond butter
  • 5 teaspoons honey
  • 1 teaspoon walnuts, chopped
  • 2 Romaine lettuce leaves

Directions:

Combine all ingredients and wrap in a Romaine lettuce leaf.  Roll up leaf, tucking in lettuce as you go.  Enjoy!

Freezing Directions:

Combine all ingredients (except lettuce leaves) and place in a freezer bag. Reserve the Romaine lettuce for serving day.  Remove as much air as possible, then label & seal.  TO SERVE:  Thaw.  Place mixture inside a lettuce leaf.  Roll up leaf, tucking in lettuce as you go.

Servings:  2 Wraps
