Gluten Free Dairy Free Chicken Skewers

 

I scored quite a deal the other day at my local grocery store.  It was a new brand to me, but it was $.99 and gluten free, so it couldn’t be beat!  After using it I have fallen in love with it!  The brand I used for the first time was Wholesome Goodness, Kansas City Style Barbecue Sauce.  I like sweet barbecue sauce and this was a perfect fit for us.  There isn’t any HCFS nor are there any other additives.  I think I will continue to hunt for this brand!  It’s the perfect sauce to use for the marinade in this recipe.  It is an extremely easy recipe to prepare, simply marinade the chicken and alternate with fresh veggies and pineapple.  Throw it on your grill or if it’s nasty out, you can cook it in your broiler.

Gluten Free Dairy Free Chicken Skewers

Ingredients:

  • 1/4 cup hot water **
  • 1/4 cup gluten free barbecue sauce **
  • 1/4 cup peanut butter **
  • 1/4 cup gluten free soy sauce **
  • 2 Tablespoons whole grain mustard (GF) **
  • 1 pound chicken breast, boneless skinless, cut into small chunks
  • 2 1/2 cups red bell pepper, cut into chunks
  • 2 1/2 cups yellow bell pepper, cut into chunks
  • 20 ounce pineapple chunks
  • 1  1/2 cups zucchini, cut into chunks
  • 12 skewers
  • foil

All items marked with an ** are marinade ingredients.

Directions:

Combine marinade ingredients (those marked with an **).  Combine chicken pieces with about 1/4 cup of the marinade.  Cover and place in the refrigerator for 1 1/2 hours.  Soak skewers in water (if wood) and alternate chicken, pineapple and vegetables.  Brush with the remaining marinade.  Fire up the grill (you can use the broiler if it’s raining) and cook the skewers for approximately 6 minutes on each side, marinating halfway through.  

Freezing Directions:

Combine the marinade and place in a quart size freezer bag.  Rinse skewers with water and alternate chicken, pineapple and veggies.  Cover with foil and place in a gallon size freezer bag.  Keep both bags together, remove as much air as possible, then label & seal.  TO SERVE:  Thaw both bags.  Brush skewers with marinade.  Place on grill or under broiler for approximately 6 minutes.  Turn, marinate again and cook for another 6 minutes.

Servings:  12 chicken skewers

  2. I have made the OAMM BBQ sauce and will try this with that sauce. I love this idea! Did you use canned or fresh pineapple? Thanks!!!

      This recipe calls for canned pineapple and that is what I recommend just for simplicity’s sake on a big cooking day. However, if you have fresh pineapple or prefer fresh pineapple, by all means…..it would be wonderful too!
