Gluten Free Dairy Free Double Decker Chipotle Bean & Turkey Tostadas

We love Mexican food in our house!  The trouble is that we have a lot of different taste preferences: one likes dairy free cheese, another does not, one can tolerate regular cheese and another does not like any type of cheese.  This meal is a wonderful option for families like ours; please tell me there are more of you!  This recipe is easy to adapt for anyone, as you can add individual toppings.  It is fast, easy and a delicious choice to add to your dinner rotation!

Gluten Free Dairy Free Double Decker Chipotle Bean & Turkey Tostadas

Ingredients:

  • 32 ounces refried beans
  • 4 Tablespoons chipotle in adobo sauce
  • .5 Tablespoons chipotle pepper, deseeded & chopped
  • 2 Tablespoons lime, juiced
  • 1.5 pounds ground turkey
  • 7 teaspoons taco seasoning (ensure GF)
  • 12 tostada shells (serving day)
  • 2 cups dairy free cheese, shredded (optional serving day ingredient)
  • 2 cups lettuce, shredded (serving day)
  • 1 cup tomato, diced (serving day)
  • dairy free sour cream (optional serving day topping)

Directions:

Combine refried beans, chipotle in adobo sauce, chipotle pepper and lime juice in a large bowl. Mix well.   Spread bean mixture on each tostada shell. Sprinkle with dairy free cheese (if desired).  Stack 2 tostadas on top of each other and place on baking sheet.  Bake at 325 degrees for 5 minutes.  Cook ground turkey in a large skillet over medium heat. Stir occasionally, until meat is browned.  Drain grease.  Add taco seasoning to turkey and stir to combine.  Load tostada with seasoned turkey, lettuce, tomatoes and sour cream ( if desired).

Freezing Directions:

Combine refried beans, chipotle in adobo sauce, chipotle pepper and lime juice in a large bowl. Mix well.  Place in a freezer bag.  Cook ground turkey in a large skillet over medium heat. Stir occasionally, until meat is browned.  Drain grease.  Add taco seasoning to turkey and stir to combine.  Let cool.  Place in a freezer bag.  Keep bags together and affix labels.  TO SERVE:  Thaw.  Spread bean mixture on each tostatada shell. Sprinkle with dairy free cheese (if desired).  Stack 2 tostadas on top of each other and place on baking sheet.  Bake at 325 degrees for 5 minutes.  Heat turkey mixture through in microwave, stirring halfway through to ensure meat is hot.  Load tostada with seasoned turkey, lettuce, tomatoes and sour cream ( if desired).

    We are here. We are here! Yes, we, too, have the dairy issues you mentioned… :( I have 4 who are lactose intolerant, 3 who are not. One who gets kidney stones from too much dairy. And I am on dairy-free due to nursing baby who seems to be sensitive to milk protein. Sigh. I often have 4 different types of milk on the fridge. Bigger sigh…

      Oh Peggy! I understand this all too well! I began on a dairy free diet because of a nursing baby with the same issues and even ended up eliminating gluten and soy as well. Since then (almost 4 years now) I have found that I am sensitive to it too! The other 2 in my house are also. It is so hard to work around dietary restrictions and I hope that we have helped to provide some recipes that meet your families needs as well as please your taste buds!

  2. Is there a month worth of soy free,gluten free milk free freezer meals?
    I am also allergic to fructose (apples, bananas, etc) but can tolerate blueberries, canned peaches if rinsed well, and cuties once a week…. thanks.
