Gluten Free Dairy Free Granola Bars

 

Granola bars are a healthy and yummy way to begin the day!  My oldest starts Pre-K this month so I love breakfast foods that we can grab to eat in the car when we are running late.  If you have kids you know that this happens almost every day!  A shoe is missing, one last bathroom run, whine whine whine…..and that is just me!  A breakfast that is healthy, can be eaten while running out the door and my picky little guy approves is gold in my eyes!

I found these perfect little carob chips.  They are fabulous!  They taste just like chocolate, and this is not the case with all dairy free chocolate!  The price was even better at just under $3 for almost 2 pounds.  You can add assorted dried fruits and nuts but remember I have Mr. Picky so I don’t want to push my luck!  These taste better than the store bought brands, you know the ingredients you are adding AND you can eat them with confidence.

Gluten Free Dairy Free Granola Bars

Ingredients:

  • .25 cup margarine/dairy-free butter
  • .25 cup honey
  • .33 cup brown sugar
  • .5 teaspoon gluten free vanilla
  • 1 cup crispy rice cereal
  • 2 cups gluten free quick cooking oats
  • 3 tablespoons mini dairy free chocolate chips

Directions:

Combine margarine, honey and brown sugar and melt in a small saucepan over medium heat.  Once bubbling, turn to low heat and cook for 2 minutes.  Stir in vanilla.  Remove from heat.  Add in cereal and oats.  Pour into greased small jelly roll pan.  This needs to be pressed in well so the bars form.  Pour chocolate chips on top and press down.  Let sit and come to room temperature for a couple of hours or place in refrigerator for 30 minutes.  Cut into bars.  Serve.

Freezing Directions:

Wrap individually and divide among number of freezer bags indicated.  Remove as much air as possible.  Label and seal.  Thaw to serve.

    Loved the recipe! Trying to find sweet treats that are healthier than packaged store bought. Crossing my fingers my picky guy likes them. If not, I’ll end up eating the whole pan.:)

    Would a cookie sheet work? I don’t have a jelly roll pan or even know what it looks like! Thanks!

    I made these tonight and they wont stay together, just crumbles. Any idea why? I did use low fat margarine, maybe thats why?

      Hi Julie! I hope you will give these another try. If you need to increase the honey a bit to offset the low fat margarine–you might need to play around with it. Low fat margarine sometimes doesn’t act the same way in cooking as other varieties.
