Gluten Free Dairy Free Potato Soup

Everyone has a favorite potato soup recipe, but it is hard to find a creamy potato soup recipe when you eliminate gluten and dairy.  This recipe is delicious, creamy, gluten and dairy free!  I ran across this recipe recently and thought it would be the perfect time to try out my new immersion blender.  If you do not have one, you can simply remove a small portion of the soup and use a traditional blender.

Ingredients:

  • 11.25 cups Russet Potatoes, washed not peeled, diced
  • 1.25 cups onion, diced
  • 10 cloves garlic, minced
  • 8 cups gluten free chicken stock
  • 1/2 Tablespoon gluten free seasoning salt
  • 16 ounces dairy free cream cheese, softened
  • 1/4 cup green onion, chopped (optional topping)
  • 1/4 cup dairy free shredded cheddar cheese  (optional topping)

Directions:

Add potatoes, onion, garlic, chicken stock and seasoning salt to crock pot. Cook on high for 6 hours or on low for 10 hours. After cooking for specified time, add the softened cream cheese and puree soup with an immersion blender until cream cheese is mixed in and about half of the soup is blended. (You could remove some soup and blend it with the cream cheese in a traditional blender and then add it back in.) Stir well.  If you desire, top with green onions and shredded cheese.

Freezing Directions:

Cook as directed above. Let cool.  Place in gallon size freezer bag.  Remove as much air as possible, label & seal.  TO SERVE:  Thaw.  Heat through.

Servings:  10

Is there a sub for the dairy free cream cheese? I’d still like it to be a whole foods recipe and I’m just guessing that DF cream cheese is pretty processed.

    • Kelly says:

Krista you can just use your favorite organic cream cheese. If you’re still going for dairy free though you could try goat cheese or coconut butter could work as well.

This looks AMAZING! We haven’t had potato soup in years, so I’m really excited to try this out!

A great substitute is a product called Tofutti cream cheese or if it is lactose you worry about use Gouda.
