Gluten Free Dairy Free Raspberry Lemon Pancakes

Ingredients:

  • 2 cups gluten free flour #1
  • 3 Tablespoons sugar
  • 1 teaspoons baking powder
  • 1 teaspoons baking soda
  • 0.5 teaspoons cinnamon
  • 0.25 teaspoons nutmeg
  • 2 large eggs (or egg substitute)
  • 2 cups almond milk
  • 1 Tablespoons lemon juice
  • 2 Tablespoons coconut oil, melted
  • 0.5 teaspoons vanilla extract
  • 1 Tablespoons lemon zest
  • 2 Tablespoons gluten free flour #2
  • 1 cups raspberries

Directions:

In a large bowl. combine flour #1, sugar, baking powder, baking soda, cinnamon and nutmeg. In a medium bowl, combine eggs, milk, lemon juice, oil, vanilla extract, and lemon zest. Gently fold wet mixture into dry mixture. Coat raspberries in flour #2, and then gently fold into mix. Allow to rest for 4 minutes. Place .25 cups of batter on preheated skillet. Cook 1-2 minutes, until lightly browned and bubbles start to form. Flip and cook for an additional 1-2 minutes. Repeat until all batter has been cooked.

Freezing Directions:

Prepare pancakes per above directions then flash freeze. Once frozen, divide pancakes among gallon freezer bags. Label and freeze. TO SERVE: Reheat in microwave for 30-60 seconds.

Servings:  6 (4 pancakes per serving)

    Could I use oat flour instead? And should I add anything else because if the substitution?

      I have not experimented with using oat flour before. I would probably suggest adding 1/4 tsp xantham gum with the oat flour. Let us know how it turns out!

    What flour do you use for Gluten Free Flour #1 and 2? Any GF flours or a special blend?

    I’m so jealous as the Costco near where I live doesn’t sell GF flour! However, I’m looking forward to trying this recipe. Sounds so indulgent and a great treat!
