Gluten Free Dairy Free Spicy Honey Chicken

I am a huge chicken fan.  There are tons of different ways that I enjoy eating it, but this recipe was a surprise to me!  It isn’t too sweet or too spicy.  It has the perfect blend of each flavor.  The glaze adds a nice mouthwatering flavor.  Enjoy this chicken along with a nice fresh salad and you have a complete meal!

Gluten Free Dairy Free Spicy Honey Chicken

Ingredients:

  • 2 teaspoons granulated garlic
  • 2 teaspoons chili powder (ensure GF)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon coriander (ensure GF)
  • 1 teaspoon salt
  • 1 teaspoon cumin (ensure GF)
  • 2 pounds chicken breasts, boneless skinless
  • 2 Tablespoons oil
  • 1/2 cup honey
  • 1 Tablespoon apple cider vinegar

Directions:

Preheat grill to medium heat.  Combine the spices in a bowl until thoroughly mixed.  Rinse the chicken and pat dry, trim any extra fat.  Dip chicken in oil and then dip in spices.  Grill chicken for 7-9  minutes on each side.  Mix the honey (might be easier if slightly warmed) and apple cider vinegar to create the glaze.  Once the chicken is almost done, brush on the glaze.  Take the chicken off the grill and brush with remaining glaze.

Freezing Directions:

Combine all spices in a bowl.  Coat the chicken in oil and then dip in spices.  Divide among indicated number of freezer bags.  Remove as much air as possible, then label and seal.  (Honey and apple cider vinegar will be used on serving day).  TO SERVE:  Thaw. Place chicken on grill and cook 7-9 minutes on each side. When chicken is almost done, brush on glaze made with honey and cider vinegar. Warm up honey slightly to make it easier to glaze. Take the chicken off the grill and brush with remaining glaze.

    We had this for dinner. Yum! It wasn’t a good night to grill, so I cooked it in a skillet with a bit of bacon grease. It worked great, and now I know it’s a year-round recipe!
