Gluten Free Dairy Free Strawberry Rhubarb Loaf

I haven’t seen any sprouts yet, but I expect the rhubarb plants to start peeking out of the ground any day now.  I can’t wait!  Gluten Free Dairy Free Strawberry Rhubarb Loaf combines two wonderful flavors in a tender, easy to make quick bread.  I love this bread’s flavor, but if anyone in the family does not care for rhubarb, never fear because the strawberries really balance the flavor.  The two rhubarb haters in my house gobbled this bread up and decided that rhubarb can be yummy after all!  LOL!  That makes this recipe a winner in my book!

Gluten Free Dairy Free Strawberry Rhubarb Loaf


  • 1 1/8 cup brown rice flour, finely ground
  • 1/2 cup sugar
  • 4 1/2 tablespoon sorghum flour
  • 2 1/2 tablespoon amaranth flour
  • 1 1/2 tablespoon garbfava flour
  • 2 teaspoon baking soda
  • 1 teaspoon guar gum or xanthan gum
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup oil
  • 3/4 cup rhubarb, chopped, cooked and cooled
  • 3/4 cup mashed strawberries
  • 2 teaspoon grated lemon zest
  • 1/2 cup walnuts, chopped


Preheat oven to 350°F. Oil a 9″ x 5″ loaf pan.

In mixing bowl combine brown rice flour, sugar, sorghum flour, amaranth flour, garbfava flour, baking soda, guar or xanthan gum salt, and nutmeg.

In separate bowl whisk oil, rhubarb, strawberries, and lemon zest. Pour fruit mixture into centre of dry ingredients and lightly mix to blend.

Spoon batter into prepared pan. Bake in preheated 350 degree oven until toothpick inserted in centre comes out clean, about 50 minutes. Cool on rack for 10 minutes before removing from pan and allowing to cool on a cooling rack.

Freezing Directions:

Allow to cool. Slice into serving sized pieces. Divide slices among number of gallon-sized freezer bags(s) indicated. Remove as much air as possible, seal, label and freeze.

To serve:  Thaw. Eat at room temperature or heated through slightly.

    I have to say I tried making this bread last week and it is now my favorite and am planning on making it asap because I am addicted! I actually prefer it over banana bread and I can’t even tell this is gluten free–this was my first real baking test with with all these new flours. Definitely a winner, so thank you!

    I am just looking into gluten free/dairy free after watching several videos on Netflix about what we are really eating. As a major bread lover, gluten free sounds pretty scary to me so I am glad that there are still bread options available. HOWEVER, I have never even heard of all these flours! And I bake all the time. So, if you live in the middle of literally “no where Wyoming” where would you find these items? And any other suggestions for a person thinking of going gluten free/dairy free? Thanks ahead of time.

      Hi Angie, yes they’re specialty flours. There are now some GF blended flours you can get in your supermarket, or you can even order them online. Amazon has some good deals as well as some speciality places like Azure Standard that may have a drop off near you believe it or not.
