Gluten Free Dairy Free Sundried Tomato Stuffed Chicken

(Angela) If you have been reading Once a Month Mom for any length of time, you may have noticed a slight obsession with two flavors around here:  buffalo chicken and sun dried tomatoes.  Today’s Gluten Free Dairy Free Sundried Tomato Stuffed Chicken Breast brings one of our favorite flavors and pairs it with fresh spinach and Italian herbs.  We hope you enjoy it!

Gluten Free Dairy Free Sundried Tomato Stuffed Chicken

Cut a pocket in each chicken breast.  In a bowl, mix the remaining ingredients.  Divide the mixture and stuff into chicken breasts.  If needed, hold chicken breasts together with toothpicks.  Cook in an oiled skillet over medium-high heat.  Sear the chicken breasts on each side for 3 minutes.  Place chicken into a baking pan and cook in a preheated 350 degree oven for 15 minutes until cooked through.  Let chicken rest for 3-5 minutes before serving.

Freezing Directions:

In the steps above, after stuffing the chicken breasts, place stuffed chicken breasts into a gallon sized freezer bag. Remove all the air possible, seal, label and freeze.

    Looks yummy, must try next week! 2 questions: how do you rehydrate the tomatoes, and what are nutritional yeast flakes can I get them from grocery store?

    I don’t need my recipes to be gluten-free but would love to try this. Would I just omit the yeast flakes and use regular cheese? Can I use sun-dried tomatoes out of a jar?

      Yes, you could! If you use the sun dried tomatoes from a jar, you do not have to rehydrate them as they will already be moist enough.
