Gluten Free Dairy Free Sweet & Tangy BBQ Chicken

Gluten Free Dairy Free Sweet & Tangy BBQ Chicken

Ingredients:

  • 0.5 cups applesauce
  • 1 cups ketchup
  • 0.25 cups maple syrup
  • 0.25 cups strawberries, finely diced
  • 1 Tablespoons balsamic vinegar
  • 1 chipotle pepper in adobo sauce, chopped
  • 1 teaspoons gluten free soy sauce
  • 2  pounds boneless skinless chicken breasts

Directions:

In a medium bowl combine applesauce, ketchup, maple syrup, strawberries, balsamic vinegar, chipotle pepper and soy sauce. Place chicken breasts in gallon bag and pour sauce over the top of chicken. Marinate in the refrigerator for at least 1 hour. Grill over medium high heat for 7-8 minutes on each side, until chicken is cooked through.

Freezing Directions:

In a medium bowl combine applesauce, ketchup, maple syrup, strawberries, balsamic vinegar, chipotle pepper and soy sauce. Divide chicken between gallon freezer bags. Divide sauce and pour evenly over chicken in gallon freezer bags. Label and freeze. TO SERVE: Thaw. Grill over medium high heat for 7-8 minutes on each side, until chicken is cooked through.

    Soy sauce is not gluten free.
    Some adobo sauce has gluten in it as well.

    Can you leave the strawberries our or replace with something else? My husband is allergic to strawberries. :-(

      Dawn – you certainly omit the strawberries – or substitute peaches or mangos for the strawberries.

        We are trying tonight with fresh raspberries, we’ll see how that one goes… :)

          Oh fresh raspberries – delish! Let us know how it tursn out!

          The raspberries came out yummy, but not a very strong flavor. I think I would use one of the stronger tasting fruits, like the peach, as recommended, next time. It was still delicious though!!
