Wild Rice Soup with Sausage & Vegetables

  • 2 Tablespoons olive oil
  • 1.25 cups onion, diced
  • 2.01 cups celery, diced
  • 1 cups carrots, diced
  • 1.85 cups Italian sausage, browned (or you can make your own)
  • 1 teaspoons salt
  • 1.5 teaspoons paprika
  • 6 cups chicken broth, gluten free
  • 2 cups cooked wild rice
  • 0.25 cups fresh parsley, chopped
  • 0.25 teaspoons pepper
  • 2 teaspoons basil


In a large stock pot, heat olive oil over medium heat. Add onion and cook until translucent. Add celery and carrots, and continue to cook. Add sausage, salt, paprika and chicken broth. Bring to a boil. Reduce heat and simmer, covered, for 15 minutes. Stir in the wild rice, parsley, pepper and basil. Continue to simmer for 5 more minutes.

Freezing Directions:

Prepare soup as indicated above. Remove from heat and allow to cool completely. Divide into quart freezer bags, label and freeze. TO SERVE: Thaw. Reheat in microwave for 1-2 minutes.

    I made this last night with chicken sausage and it was so good and easy to make. Very healthy recipe as well. Definitely will be making this again.
