Gluten Free Tortillas

Tortillas can be a tricky thing when you are gluten free.  Some are chewy, others are hard and it just isn’t easy to replace the flour tortilla.  When I came across this recipe I had to give it a try.  It can also be used for crepes by adding vanilla to the recipe.  It is important to use a non-stick pan in preparation and also do not grease the pan.  This will create a greasy tortilla–trust me.  I tried to grease the pan with coconut oil and it was a complete flop.

  • 2 large eggs
  • 1 teaspoon melted coconut oil
  • 1/8 teaspoon baking soda
  • 1/4 cup arrowroot powder
  • 2 teaspoon coconut flour
  • 1/8 teaspoon salt


Place eggs in bowl and whisk in melted coconut oil.  Add the dry ingredients and beat well.  Pour approximately 1/4 batter into a small skillet over medium heat.  Immediately roll it around to coat bottom evenly. The tortilla will start to pull away from the edges.  Cook for 1 minute on each side.  Repeat for remaining batter.  Use with indicated recipes or divide among indicated number of freezer bags.

Prepare as directed above.  Use with indicated recipes or divide among indicated number of freezer bags. 

Servings:  4 tortillas

    I do not have any non-stick skillets, but I do have a non-stick griddle. Would that work?

    Are these sort of “eggy”? Or does the arrowroot powder help combat that?

    Thanks Kelly! I recently tried a paleo crepe recipe, and it was almost like a thin omelette with a hint of coconut flour flavor. Not horrible, but not what I was looking for at all (especially since I’m semi-sensitive to eggs). I will give this a try! :-)

    Love the gluten free and dairy free recipes! Any ideas on what could be substituted for the egg but still effectively bind the tortillas?
