Grilled Pasta Packets

Ingredients:

  • 16 ounces whole wheat penne pasta
  • 1.5 cups grape tomatoes, halved
  • 1 cups red onions, sliced
  • 0.5 cups fresh basil, roughly chopped
  • 1 Tablespoons oregano
  • 3 cloves garlic, minced
  • 3 Tablespoons balsamic vinegar
  • 1 Tablespoons olive oil
  • 8 ounces mozzarella cheese, shredded
  • 6 foil sheets (about 12in x 12in)

Directions:

Cook pasta according to package directions, until just al dente. In a large bowl combine penne pasta, grape tomatoes, red onions, basil, oregano and garlic. In a small bowl, whisk balsamic vinegar and olive oil. Pour over pasta mixture, stirring to combine. Add mozzeralla cheese and stir. Divide pasta onto aluminum foil, placing in the center and folding into a packet. Grill on low 10-12 minutes, shaking the packets half way through to redistribute pasta and veggies.

Freezing Directions:

Prepare pasta salad per above directions but do not place it in the foil. Divide into gallon freezer bags, label and freeze. TO SERVE: Thaw. Place contents of bag in the center of aluminum foil sheets, folding into a packet. Grill on low 10-12 minutes, shaking the packets half way through to redistribute pasta and veggies.

    How do the tomatoes and cooked pasta hold up after being frozen?

      Hi McKenna! I’ve never had a problem with pasta after being frozen. You do want to cook until barely al dente since it will cook more when defrosted. In regards to the tomatoes, they will be a little mushier than eating them fresh. If you are concerned that might bother you, you could always leave the tomatoes out until you get ready to grill the packets.
