Halibut Fish Tacos with Mango SalsaFor me, one of the best things about vacation to a beach location is finding a good fish taco and trying different kinds of fish and toppings.  Ever since discovering fish tacos, I’ve made all kinds of them at home using different varieties of fish.  This version with a spicy yet slightly sweet mango salsa paired with halibut  tops the list of great at-home options!  You can substitute another fish such as Mahi-Mahi or Tilapia for the halibut depending on your preferences.

  • 8 ounces halibut
  • 1 cup chopped mango
  • 0.25 cup chopped red onion
  • 0.25 cup chopped cilantro
  • 0.25 cup chopped and seeded jalapeno
  • 1 Tablespoon lime juice
  • 1 Tablespoon honey


In a bowl, combine the mango, onion, jalapeno, cilantro, lime juice and honey.  Proceed to freezing instructions.  

Freezing Directions:

Place halibut gallon size freezer bags.  Place salsa in quart size freezer bags, placing in with fish.  To serve, thaw.  Grill or broil fish 3-4 minutes per side, seasoning with salt and pepper.  Chop fish into bite size pieces.  Serve on soft taco shells with mango salsa.

    I love this blog! I’m curious about the mango salsa: what is the consistency like when thawed? Do the onions and cilantro end up mushy and discolored, or do these ingredients actually freeze and thaw well?

      The salsa ingredients freeze OK but there will be a consistency difference on the cilantro and onions compared to fresh. If that is not desirable to you, the salsa could be prepared on serving day.
